Easy Recipes : Saffran Macarons with Lemon Ganache

This easy recipes come from my cousin’s creation living in sweden, it is a cake that suitable for light meal in the afternoon or as morning snack. A macaron is a sweet meringue-based confection made with eggs, icing sugar, granulated sugar, almond powder or ground almond, and food colouring. The macaron is commonly filled with ganache, buttercream or jam filling sandwiched between two biscuits.

Ingredients :
  • 110 gram egg whites
  • 5 tablespoon caster sugar
  • 200 grams confectioners sugar.
  • 100 grams almond flour.
  • 1 grams saffran (not paste nor in liquid form....use real saffran).

Directions :
  • First you have to whip these two ingredients (egg’s whites and caster sugar) in a bowl until when you put the bowl upside down the mixture doesn't drop. Just for some information about the egg, separate egg whites put them in a glass jar/bowl at a room temperature a day before and cover them with a plastic foil.
  • Mix the merengue carefully with a sifted powdered sugar (confectioners sugar) and sifted almond flour.
  • Carefully mixing the dough with a spatula until it turns a little bit like lava (dripping slowly).
  • Let them rest for 1 hour then bake in 125-150 celsius degree for 10-12 minutes until they form some feet at the bottom of the cookies.
  • For the Lemon Ganache all you need is : whipped cream, lemon zest, lemon concentrate around 4-5 drops or 2 teaspoon, gelatin powder or melted white chocolate mix with 1 tbs butter and yellow color paste.

Some NOTES :
We could make creations with Lemon Ganache, change yellow color with any color as desire, but remember… use only health product.
