This easy recipes come from my cousin’s creation living in sweden, it is a cake that called
swiss roll, but she modified it and make some creation so it is called red
velvet swiss roll. A Swiss roll or jelly roll (or cream roll when so filled) is
a type of sponge cake roll. A thin cake layer is made of flour, eggs, and sugar
and baked in a very shallow rectangular baking tray, called a sheet pan. The
cake is removed from the pan and spread with jam or buttercream, rolled up, and
served in round cross-sectional slices.
Ingredients :
- 4 eggs
- 1,5 decilitre sugar
- 1 decilitre cake flour
- 0,5 decilitre potato flour
- 1 teaspoon baking powder
- 15 ml red food coloring gel or paste
- 2 decilitre powdered sugar
- 100 gram mascarpone cheese cream
Directions :
- Whip 4 egg whites with 0,5 dl sugar until stiff. Whisk 4 egg yolks with 1 dl sugar until pale & airy. Add 1 dl cake flour and 0,5 dl potato flour, 1 teaspoon baking powder, mix and sift the flour into the egg yolk batter then pour into merengue, fold gently and slowly add 15 ml red food coloring gel or paste. Bake for 10-15 minutes in 175 celsius degree.
- For filling : whip a heavy cream with 2 dl powdered sugar and 100 gram mascarpone cheese cream.
- When the red velvet is done, set aside and cool off then use white marzipan to cover the outer side of the roll.
Some NOTES :
As variations we could change the color with yellow or green
or any coor as desired, but as consequence the name of this swiss roll also
change J
